Panini Mexicana

Panini Mexicana as the name suggests has the mexican flavours in it. It is very filling and vegetarian recipe.

Panini Mexicana








Ingriedients:
Store bought Veggie Pattice.
Sourdough Bread or any other bread of choice
Cheese of your choice,I use mozzarella
Lettuce
Spray oil
 
For Corn Salsa -
Corn kernnel boiled 1cup
Tomato 1 large finely chopped
Jalepeno 1 seeded and finely chopped
Red kidney beans 1/2 Can
Red onion 1medium size finely chopped
Cilantro 1 cup finely chopped
Jucie of 1 lime
Salt and pepper to taste
 
For the avacado spread
Avacado 1 mashed
Chives few sprigs finely chopped
Dried red chilles 2,roast them and soak them in covered hot water for 30 mins
Salt and Pepper
 
Method-
  • To make corn salsa add all ingredients along with lime juice,salt and pepper.
  • Using a fork mash the corn salsa in a bowl untill beans and corn are roughly crushed.
  • To make avacado spread mash a ripe avacado in a bowl
  • Add chopped chives.
  • using a fork mash the soaked red chillies and mix it in the avacado paste.
  • Add salt and pepper to taste into the spread.
  • Heat the Panini maker.
  • Take a piece of sourdough bread and cover it with the avacado spread.
  • On it put the corn salsa mix.
  • On the other piece of bread apply the spread ,top it up with lettuce leaves.
  • Put a store bought pattice(heat it in the microwave or oven before adding in panini)and add the cheese
  • Spray oil on to the panini maker.
  • Join both the pieces and grill it in the panini maker until the golden brown grill marks appears.
  • Cut them in half and serve it.
