Dal Dhokli is an Indian take on fresh rolled home made pasta dish made in lentil stew.Its one pot, healthy yet delicious comfort food which can be made anytime.Its very good option for chilly wintry nights.I make this using a mix of various lentil and wheat flour.
Ingriedients:
For Dal /Lentil Soup.
Toor dal/split Pigeon Pea 1/2 cup
Yellow Mung Dal /Yellow Mung Bean 1/2 cup
Green Mung Dal/Green Mung Bean 1 cup
Chana Dal/Split Gram lentils 1/2 cup
There is no fix or required measurement for lentil mix, its your chioce whichever lentil you want to take it in whatever quantity.
Water to soak and cook lentil
Turmeric powder 2 t spoon
Salt to taste.
For Dokli/Pasta
Wheat flour 2 cups
EVOO 2 tb spoon
Coriander seeds 1tb spoon
Carom seeds/ajwain 1/2 tb spoon
Fennel seeds/saunf 1/2 tb spoon
Chilly powder 1 tb spoon
Salt to taste
Grated ginger 2 heaping tb spoon
grated jalepenos 2 heaping tb spoon
Water to knead the dough.
(to make flovoured dhoklis add the flavour while kneading the dough, for eg I made tomato flavoured, spinach flavoured and besan(gram flour) flavoured dhoklis by dividing the flour into three equal parts and added spinach puree in one, store brought tomato paste in one and gram flour in one,and then knead the dough with as required water.Rest of the steps and ingriedients are same.)
For Seasoning and Garnishing:
Whole dry red chilly 1-2 pc
Cloves 4
Cumin seeds 1 tb spoon
Asafoetida 1/2 t spoon
Coriander powder 2 tb spoon
Chilly powder 1 tb spoon
Garam masala 1 t spoon
salt to taste
Onion 1 large chopped
Tomato 2 large chopped
Jalepenos 1 chopped
Grated ginger 2 tb spoon.
Cilantro 1 cup chopped
Lime juice to taste
Method:
- Wash and soak mix lentils in water for an hour.
- In a pressure cooker add the soak lentils and water along with turmeric powder and salt.Let it simmer uncovered on medium high until you prepare dhokli/pasta.
- To prepare dhokli/pasta, in wheat flour add EVOO,coriander seeds,carom seeds,fennel seeds,chilly powder,salt, grated ginger and grated jalepeno.Knead the dough with water.
- Roll out the dough just like chapati and cut into any shape(round,square,rectancle,triangle,diamond)
- Add all the dhoklis/pasta to the lentil mix simmering in pressure cooker.Pressure cook it until 2 whistle.Then let it stand until the pressure is released.
- Meanwhile prepare seasoning, in a medium heated pan add EVOO cumin seeds,cloves,asafoetida,whole dry chilly.Let it sizzle.
- To it add Half of chopped onions,jalepeno,grated ginger 2 tb spoon and sautee them until onions are translucent.
- Add half chopped tomatoes and salt.Sautee them until a smooth paste.
- Add chilly powder,coriander powder and cook for 2 more mins.
- Add garam masala and turn off the heat.
- When the pressure is released tranfer the dal dhokli mix in a bowl and add the seasoning.
- Serve in soup bowl or deep dish with chopped onions,tomatoes,jalepeno,cilantro and lime juice on top.
