Although they are high in carbs and fats yet they are to die for.One medium size contains 200 calories in which 54 comes from fat.One best way to enjoy them is to eat in small quantities and eat early in the day.
Ingreidients:
For Boondi:
1cup Gram Flour
1/2 cup Water
1t spoon rose essence.
Oil to deep fry.
For Sugar Syrup:
1 1/2 sugar
1cup water
1 t spoon rose essence
4-5 cardamom crushed
A pinch of saffron dissoved in little water
5-6 almonds slivered

Boondi Laddu |
Ingreidients:
For Boondi:
1cup Gram Flour
1/2 cup Water
1t spoon rose essence.
Oil to deep fry.
For Sugar Syrup:
1 1/2 sugar
1cup water
1 t spoon rose essence
4-5 cardamom crushed
A pinch of saffron dissoved in little water
5-6 almonds slivered
Method:
- Mix half cup water in 1 cup of gram flour and mix it well till 10-15 mins,until a soft lump free batter is formed.
- Add 1t spoon of rose essence into it.
- In a saucepan add 1 cup of water and 1 1/2 cups of sugar.Bring it to boil and stir it occassionaly until the sugar is dissolved.Turn the heat to low and let the syrup cook until it reaches 1/2 thread consistency(when you take a drop of syrup in between your thumb and index finger to strech it should strech half way and break.) It should take 15-20 mins max.
- Meanwhile heat the oil in a wok .
- A seive with round holes will be required to make the boondis.
- To test the batter pour little bit on to the sieve if it drops through the holes its good.It should be of pancake's batter consistency
- Pour the batter onto the sieve held over the hot oil.
- Seive should be held approximately 2 inches away from the oil.
- As you pour the batter small round balls(boondi)will form in the oil
- Fry them for few seconds,do not brown them.
- Seive them out into the still hot sugar syrup.
- Everytime you pour the batter to make boondi clean the sieve.
- Once all the boondis are in the syrup add cardamom saffron(seperate water) and slivered almonds along with remaining 1 t spoon rose essence.
- Take the mixture out in the plate.
- Start making laddos when the mixture is still hot enough to handle.
- If the mixture cools down warm it up in the microwave and make laddos.
- Enjoy them with freinds and family.
