Savoury Quinoa Crepes/Dosa

Quinoa are the edible seeds highly appreciated for their protein contents.They are considered as the source of  commplete protein.Quinoa is gluten free and good source of dietry fibers,magnesium,phosphorous iron and calcium which makes it useful for vegans and lactose intolerant


 
Ingriedients:
2 cups of Quinoa.
handful of baby Spinach.
2 Green Chillies.
An inch of Ginger.
1/4 Bell pepper (Green Yellow Orange Red) jullienne cut.
1/2 Red Onion medium jullienne cut.
Cabbage little bit jullienne cut.
4-5 baby Carrots jullienne cut.
1 medium Tomatoes jullienne cut.
1/2 cup greek yoghurt.
1 cup shredded reduced fat mozzarella.
2 tb spoon EVOO.
Spray Oil can.
Eno.
Black Pepper crushed.
Salt to taste.
Method:
  • Wash 2 cups of Quinoa and soak it in water for an hour.
  • Take all the veggies except baby spinach green chilles and ginger and sautee them in 1 tb spoon EVOO in a heated skillet with salt and black pepper
  • Grind the soaked Quinoa with little water in grinder along with baby spinach green chilles and ginger.Batter consistency should be just like the any other pancake or dosa batter.
  • Pour the batter in a bowl.
  • Add in 1/2 cup greek yoghurt and remaining 1 tb spoon EVOO.
 
Quinoa Batter
  • Heat a flat griddle and spray oil on it,when its hot wipe it off with the damp kitchen towel.
  • Add Eno just before making crepes.
  • Take spoonful of batter and spread it onto the griddle, spray little oil around the crepe.
  • Let it crisp and then flip it over.
  • cook it for a second and flip it over.
  • Fill the crepe with the sautee veggies and and shredded cheese.



  • Serve them with condiments like ketchup,mint chutney,coconut chutney or tamarind chutney.
