Baguette Pizza

A very delicious quick and healthy take on traditional pizza.This recipe is a sure winner in the kitchen and on the dinning table.

Ingredients:
 
A baguette bread
2 Avacadoes
4-5 White Mushrooms
Medium sized red bell pepper
2-3 sprigs green onion
1 Jalepeno
Bunch of cliantro
2 limes zested and then juiced.
Fresh mozzarella 
Ragu pizza sauce or hot salsa
Salt
Black pepper
EVOO(extra virgin olive oil) lemon flavoured.
 
 
Method:-
 
  1. Take a baguette and slit open it.
  2. Brush it with EVOO lemon flavoured sprinkle salt and pepper.
  3. Put it in the oven for 2 mins
  4. Meanwhile cut julienne red bell peeper and cut the white mushroom,place them on a baking tray spray EVOO salt and pepper and roast them in oven for 5 mins.
  5. Take the baguette out and spread  couple of spoons full of  ragu pizza sauce.
  6. You can replace ragu pizza sauce with any hot tomato salsa.
  7.  Make Guacamole( to finely chopped green onions and 1 jalepeno add a lime juice and salt set it aside for couple of mins. so that the juices from the onion and jalepeno are released which gives a very good flavour to gaucamole.Then add 2avacadoes, chopped cliantro and some black pepper mash them.If you want you can add 1 finely chopped tomato too)
  8. Put a generous amount of gaucamole to the baguette.
  9. Add roasted red bell pepper and mushrooms
  10. Add the crumbles of fresh mozzarella.
  11. Place it back into the oven and broil it for another 5mins.
  12. Take it out and just before serving, zest(outer scrapping of the lime) the lime over it.
  13. Enjoy it with Cruncy fresh salad made from baby spinach, chopped fennel bulb and grated jicama marinated in fresh lime juice salt pepper and EVOO (lemon flavour).
