Appe with Roasted Pepper Dip.

There are many ways to make Appe a south indian dish made from steaming the dosa or idli batter.
I am writing about the spicier and instant appe recipe.
To make appe a special mould is required, which is available at indian grocery stores.

 
 
Ingriedients:
For Appe
Dosa batter from the grocery store 3 cups
(u can make one by soaking rice and urad dal by the proportion of 2:1 respectively)
Coarse Sooji/semolina 1cup
Yoghurt 1/2 cups
Salt to taste
Crushed black pepper
Black Mustard Seeds 1tb spoon
Onion 1medium finely chopped
Jalepenoes 1 finely chopped
Curry leaves 4-5
Oil 2 tb spoon
 
Method:
  • Mix dosa batter semolina and yoghurt and form a appe batter.
  • Add in salt crushed black pepper.
  • In a small heated pan add oil,to it add black mustard seeds let them splutter
  • Add curry leaves onion and green chilles let them sautee for a min.
  • Add the mix into the appe batter.
  • Heat up the appe mould and spray oil into it.
  • Pour the batter into it.
  • Let it cook for 2mins or untill u see a light golden brown crust.
  • Turn the appe in the mould to cook from other side.

Serve them with any chutney or condiment you like or try the roasted pepper dip.
 
Ingriedients
Roasted pepper dip
Red,green,yellow ,orange bell pepper 1/2 each julienne cut
Deseeded tomatoes 2 julienne cut
Cilantro few sprigs
1 Lime juice
Canned Chickpeas1/4 cup
Crushed black pepper
Salt to taste
EVOO 2tb spoon
 
Method:
  • Toss all the pepper and tomatoes on a baking sheet
  • Drizzle EVOO Salt and Black pepper.
  • Roast in oven for 15 mins
  • In a blender blend all the roasted veggies,chickpeas, lime juice and cilantro.
  • Adjust the consistency using warm water.
  • In a heated pan add oil ,to it add some mustard seeds.
  • Add the seasoning to the the dip.
  • Serve the dip as the side with appe.
