Gutte/Gatte are the most popular rajasthani dish served along side chapati bati or rice.They are made from gramflour and various spices,then cooked into buttermilk. I usually cook the gatte tradional wayuntill i discovered this new way of cooking them.I stuffed gatte with spinach and paneer(indian cheese)and cooked them in tangy tomato gravy....and the outcome was delicious.

Ingredients:
For Gatte(gram flour dumpling)
1Cup gram flour
1t spoon red chillie powder
1t spoon coriander powder
1t spoon kasoori methi
1 t spoon fennel seeds
A pinch of asafoetida
Salt to taste
1tb spoon yoghurt+2tb spoon water mixed well.
For Stuffing Gutte
3 cups finely chopped baby spinach
1/2 cup finely grated paneer(indian cheese)
salt to taste
black crushed pepper to taste.
For Gravy
1 t spoon EVOO
1t spoon mustard oil or any other cooking oil
1 t spoon mustard seeds
2 dry red whole chillies
a pinch of asafoetida
1 large tomato roughly chopped
1 medium onion roughly chopped
1 jalepeno roughly chopped
1 inch pc of ginger roughly chopped
2 t spoon tomato paste(store bought)
1 t spoon red chillie powder
1 t spoon turmeric powder
2 t spoon coriander powder
salt to taste
Method-
- Mix all the ingredients for making gutte/gatte and knead it into tight dough with the help of yoghurt water mixture as needed.
- Divide the dough in five equal parts.
- To prepare the stuffing mix well chopped spinach and paneer,to this add pepper and salt mix it well.
- take one part of dough roll out with roller pin.
- Take the filling and put it on one side of the rolled dough.
- Roll the dough taking in the filling.

- Steam the rolled rolls for 15-20 mins until they are cooked and firm.

- Let them cool for 10 mins.
- Cut them into 1/2 inch round pcs.

- In a heated pan add 1t spoon olive oil add roughly chopped onions tomato jalepeno and ginger.
- Roast them untill they are cooked.
- transfer them into the grinder and grind untill smooth paste.
- Heat the wok add mustard oil.
- To it add mustard seeds and asafoetida and whole dry red chillie.
- Add the raosted onion tomato paste.
- Add all the spices;red chillie powder,turmeric powder,coriander powder and salt.
- Stir it well and let it cook for 10 mins.
- Add tomato paste and tamrind paste into the gravy.Stir and let it cook for another 10 mins.
- Now add gutte rounds into the gravy and let it cook for 5 mins.
- Turn off the heat and cover the wok.
- Garnish with chopped cilantro before serving.....enjoy!!!!!
